Description

Pasta tubes stuffed with meat and spinach with tomato sauce and besciamella.

Ingredients
  • Pasta Dough~~~:
  • 1.5 cup flour
  • 1 egg
  • 1 egg white
  • 1 tblsp olive oil
  • salt
  • water
  • FILLING~~~:
  • Olive oil
  • 1/2 medium onion chopped
  • 1-2 garlic cloves chopped
  • 10 oz spinach
  • butter
  • about 1lb of steak (or mix with lamb, or veal, sausage, etc)
  • 1 chicken liver
  • a good amout of Parmigiano
  • a little heavy cream
  • 2 eggs
  • oregano
  • salt
  • pepper
  • Besciamella~~~~:
  • 6 tblsp butter
  • 6 tblsp flour
  • 1 cup milk
  • 1 cup heavy cream
  • salt
  • pepper
  • ~~~Use a good tomato sauce recipe from your famiglia or I'm sure there is one online somewhere. I can't give away all the secrets and its an art in itself! :) I'll say San Marzano tomatoes are my favorite!
  • Topping~~~~~:
  • More Parmigiano
  • some butter cut in small peices

Directions/Steps
  1. Combine pasta dough ingredients and knead for 10 minutes or so until it has a nice texture. You will need to add water a little at a time untill smooth but firm. Let it sit for 10 minutes.
  2. Next roll it out until very thin and cut out fairly large rectangles.
  3. Boil for about 4-5 minutes and then pull out and set on paper towel.
  4. Filling:
  5. Cook onions and garlic with butter and olive oil on lowish heat until they turn soft.
  6. Add in drained spinach and probably more butter and cook for a few minutes.
  7. Next brown your steak in butter, salt and pepper. When done remove from pan and cut very very small so its almost like ground beef (or just grind your own meats).
  8. Cook chicken liver in meat fat with butter untill browned but don't over cook. Chop it up very very small as well.
  9. Mix all the rest of the filling ingredients together with spinach and meat.
  10. Besciamella:
  11. Melt butter. Remove from heat add flour. Pour in milk and cream. stir constantly on medium heat untill thick and season to taste.
  12. Assemble and Bake:
  13. Set oven to 375. Put some tomato sauce in bottom of large baking pan. Roll up some filling in the pasta and place into the pan seam down.
  14. Top with besciamella and then tomato sauce. Grate some Parmigiano on top. Sprinkle chopped butter over top.
  15. Bake for about 20 mins or until sauce is bubbling and cheese melts.
  16. You may want to broil the cheese additionally to brown it after!

Additional Tips

Keep in mind that i don't go off a recipe so all ingredients are estimated. I often times flavor sauce a bit differently and I will also change seasoning around to match the meat choice etc. I hope you enjoy my basic recipe :) buon appetito!!!
