A delightfully wonderful chocolate mousse topped with a Balsamic Raspberry Marscarpone "whipped" cream...Yummm!! your social media marketing partner
  • 7 squares semisweet chocolate, chopped
  • 3 tbsp butter
  • 3 egg yolks
  • 1/4 cup water
  • 2 tbsp sugar
  • 1 1/4 cup whipping cream
  • For Topping:
  • 4 oz marscarpone cheese, room temp
  • 4 tbsp butter, softened
  • 3 tbsp raspberry jam
  • 3 cups confectioners' sugar
  • 2 tbsp balsamic vinegar

  1. Put metal bowl in freezer to use for whipping cream later.
  2. Using a double boiler, over low heat, melt chocolate and butter together. Stir until smooth. Remove from heat and cool for 10 minutes.
  3. In a saucepan, whisk yolks, water and sugar together for 2 minutes, constantly stirring. It is very important to do this over low heat so eggs don't "scramble". Stir until foamy.
  4. Remove from heat and whisk in chocolate mixture. Stick saucepan in freezer for 5 minutes.
  5. While waiting for this to chill, remove chilled bowl from step 1 and use it to whip the whipping cream. Mix cream on high for 8-10 minutes.
  6. Remove chocolate mix from freezer, stir and return to freezer for 5 minutes. After 5 minutes, remove from freezer, stir and mix in whipped cream. Once blended, dish into serving dishes and refrigerate for 3-4 hours.
  7. While chilling mousse, whip marscarpone, butter and jam together for 4-5 minutes on medium until smooth.
  8. Add confectioners sugar, one cup at a time, until topping is consistent enough to pipe on top of mousse. Can refrigerate topping if needed to make it thick enough to pipe.
  9. When smooth, add balsamic vinegar until blended.
  10. When done, pipe onto each mousse dessert and serve.

Additional Tips

Very important not to rush this recipe. If you melt the chocolate too fast or cook the eggs on high, you may end up with more of a burnt chocolate egg mixture instead of this beautiful mousse... not as yummy... definitely not romantic :) Since the chocolate usually comes with 8 squares, you can grate the last square and sprinkle the shavings over the mousse.
