Chop Chop Antipasto Salad

Ingredients

For the salad

  • 1 head romain lettuce, chopped
  • 1 small cucumber, chopped
  • 1 15.5 ounce can chickpeas, drained
  • 6 ounces Genoa salami, chopped
  • 6 ounces prosciutto, chopped
  • 0.25 cup peperoncini, chopped
  • 0.25 cup sun dried tomatoes, chopped
  • 0.5 cup shredded mozzarella

For the dressing

  • 0.5 cup Extra Virgin Olive Oil
  • 0.25 cup red wine vinegar
  • 1 tablespoon oregano

Directions

  1. To prepare dressing, whisk ingredients in a mixing bowl. Slowly pour oil in a steady stream while whisking to incorporate. Set aside.
  2. Combine all salad ingredients in a large serving bowl. Toss with dressing to coat.
