Lemon Pie - Crostata di Limoni ___
Ingredients
For the Dough:

For the Cream:

milk

egg yolks

tablespoons
flour

tablespoons
sugar

juice of lemon
Directions
Dough Preparation:
In a mixing bowl add 1 cup of flour, 1/2 cup of melted butter, 1/2 cup of sugar, 2 eggs, zest of one lemon, juice of one lemon and a pinch of salt.
Mix all the ingredients into a ball of dough with uniform consistency. Make sure you work the dough really well.
Let the dough rest for one hour.
Cream Preparation:
In a mixing bowl add 1 1/2 cups of milk, 2 egg yolks, 2 Tbs of flour, 2 Tbs of sugar and the juice of one lemon.
Mix all the ingredients for 5 minutes with an electric mixer until smooth.
Heat the cream in a saucepan on the stove, stirring constantly, until tick.
Let the cream cool.
Pie Assembly:
Roll the dough into a 10" round pie dish. Retain some of the dough for the stripes.
Pour the cream into the crust.
Top the pie with stripes into a rhomboid design. Cut the stripes with a ravioli cutter for a better design.
Bake the pie for 30 min. at 350F or until golden.
