Pasta With No Cook Tomato Pesto

Ingredients

For the Pesto:

  • 1 pint cherry tomatoes
  • 3 cloves garlic
  • 0.25 cup basil leaves, packed
  • 1 cup whole milk ricotta
  • 1 cup grated pecorino Romano cheese
  • 1 teaspoon salt
  • 1 pound Fusilli pasta

Directions

In a processor, combine all the ingredients and process till smooth.

Taste for seasoning, and season with salt as desired.

Pour over Al Dente  pasta and mix well.
