Nonna's Ricotta Cake

A sweet and moist Ricotta Cake with a lovely scent of orange and lemon. To be made not only at Christmas but for every special occasion as well.



Ingredients

For 10 Person(s)

For the Cake:

  • 3 pounds fresh ricotta cheese
  • 8 large eggs
  • 1/2 pound sugar
  • 2 oranges, zest only
  • butter for coating bottom and sides of pan

Directions

  1. In a bowl mix together all the ingredients very well.
  2. Coat the bottom and sides of a 9" springform pan with butter.
  3. Pour the mix in the springform pan.
  4. Bake for 30 minutes at 425F then continue baking for an additional 40 minutes at 380F.
  5. Let it cool and serve.
