Line a baking sheet with parchment paper or aluminum foil and spray with baking spray. Set aside.
In a large mixing bowl grate the almond paste with a large cheese grater. Add the sugar, cornstarch, baking powder, zest and limoncello. Beat with an electric mixer until smooth. Add in the beaten egg white and mix with the mixer until fully incorporated and smooth.
Using a small ice cream scoop or two teaspoons drop a small dollop of dough, about 2 teaspoons into confectioners sugar. Spoon some confectioners sugar. Spoon some sugar over the dough so it is evenly coated with sugar before you attempt to roll it. Roll into little balls. Place on prepared baking sheets 2 inches apart. Bake for 10-12 minutes. The cookies may be soft out of the oven but will firm up as they cool. Avoid moving them from the baking sheet until cool.

The dough will be sticky and won’t hold a shape until they are put in the confectioners sugar. Drop in small spoonfuls into a bowl of the confectioners sugar and then roll into balls. Bake until the edges barely start to change color. The recipe should make 2 doz. I didn’t realize this, and made my first batch too big. I got about 18 cookies. They were too soft and fell apart when picked up. Still tasty though! Will make my next batch much smaller. These are great, delicate, tasty cookies. Perfect for the New Years Eve party I’m going to. -

After looking in my pantry I was happy to see that i had all the ingredients but one, Almond Paste. Do not be surprised if the dough is soft and looks like you are unable to roll. Once you drop them into the sugar it was super easy. I know the recipe called for a scooper or spoon. I preferred the spoon. It allowed me to control it better. Please post more recipes with lemon! Loved these and can't wait to try more! -

Something went very wrong. The batter was too liquid to make a cookie. Is there an ingredient missing? I had to add 1/2 up of flour in order to get them to a texture I could put on the cookie sheet. When they cooked they were flat, not like a crinkle cookie at all. The flavour was good however. Also, the beaten egg white - what consistency? Beat with a fork or with an electric mixture to soft peaks? If someone can let me know what I did wrong -
