I recently bought a new sauté pan at Home Goods which inspired me to make this dish tonight. I also had some leftover zucchini from a cooking class I conducted a few days ago, so I was really also looking for an excuse to cook them up!

I also had some leftover zucchini from a cooking class I conducted a few days ago, so I was really also looking for an excuse to cook them up!<br /><br />Italian veggie medley stir-fry <br />Serves 4<br />Ingredients<br />3 zucchini – washed and diced<br />2 – 3 medium potatoes – peeled, washed, cut in half and sliced thinly<br />1 bag frozen artichoke hearts (Trader Joe’s has the best ones!)<br />1 medium onion – thinly sliced<br />2 garlic cloves – finely chopped<br />2 tablespoons parsley, chopped<br />1 teaspoon of oregano<br />1 teaspoon salt<br />2 – 3 sweet Italian sausages, thinly sliced (I used pre-cooked ones in this dish)<br />2 – 3 tablespoons oil<br />1 cup of water<br />Directions<br />1) In a large sauté pan add all of your ingredients except the water<br />2) Stir fry the ingredients for just a few minutes on medium heat<br />3) After a few minutes, lower your heat to low-medium and add ½ cup of water and let that cook uncovered for about 12 to 13 minutes, check on them a
