As the tradition at Easter was to butcher a lamb or a goat, nothing would go to waste.  Even the head! The head would be prepared in a dish called Capuzzelle.  This of course is not a dish for those with a weak stomach.  Here we present recipes on how Nonne prepare it. Enjoy!
