Ingredients
3 zucchini – washed and diced

Italian veggie medley stir-fry
Serves 4
Ingredients
3 zucchini – washed and diced
2 – 3 medium potatoes – peeled, washed, cut in half and sliced thinly
1 bag frozen artichoke hearts (Trader Joe’s has the best ones!)
1 medium onion – thinly sliced
2 garlic cloves – finely chopped
2 tablespoons parsley, chopped
1 teaspoon of oregano
1 teaspoon salt
2 – 3 sweet Italian sausages, thinly sliced (I used pre-cooked ones in this dish)
2 – 3 tablespoons oil
1 cup of water
Directions
1) In a large sauté pan add all of your ingredients except the water
2) Stir fry the ingredients for just a few minutes on medium heat
3) After a few minutes, lower your heat to low-medium and add ½ cup of water and let that cook uncovered for about 12 to 13 minutes, check on them a
