Mascarpone Sugar Cookies

For the cookies

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla
  • 8 ounces mascarpone
  • 2 1/2 cups all purpose flour
  • 1/2 cup tri color nonpareils


  1. In a large bowl, cream butter and sugar until light and fluffy. 
  2. Add egg yolk and vanilla; beat until blended. 
  3. Beat in mascarpone just until combined. 
  4. Gradually add flour, mixing well after each addition until well combined.
  5. Chill the dough for 1 hour.
  6. Heat oven to 350 degrees. 
  7. Roll spoonfuls the size of a golfball of dough in your hands and roll in tri-color nonpareils.
  8. Bake cookies on parchment covered cookie sheet for 12 minutes. Cool completely.
