Eggs alla Caprese
Eggs alla Caprese... a healthy and delicious breakfast.
For 1 Person(s)
For the Eggs:
- 2 large eggs
- 2 slices of mozzarella
- 2 slices of tomato
- salt & pepper
- extra virgin olive oil
- 1 leaf of basil
- Add 2 Tbs of EV olive oil to a pan. Let the oil get hot.
- Add the two eggs, the slices of tomatoes and over the tomatoes add the slices of Mozzarella.
- Add salt and pepper as desired.
- Once the eggs are cooked and the mozzarella has melted, serve and garnish with a leaf of basil.
